Hawaiian Meatballs


1- 1/2 lb ground beef
2/3 cracker crumbs
1/3 cup minced onion
1 egg
1-1/2 teaspoon salt
1/4 teaspoon ginger
1/4 cup milk
1 tablespoon oil
2 tablespoons cornstarch
1/2 cup brown sugar
1-13 oz can of pineapple tidbits
1/3 cup vinegar
1 tablespoon soy sauce
1/3 cup chopped green pepper

  1. Drain pineapple, reserve liquid.
  2. Combine: Beef, cracker crumbs, onion, egg, salt, ginger, & milk. Mix well.
  3. Shape into rounded balls.
  4. Add oil to skillet and cook meatballs until browned and thoroughly cooked.
  5. Discard the grease. Remove the meatballs from skillet and place them in a warm over to keep them warm.
  6. Combine the cornstarch, sugar, pineapple juice, vinegar, soy sauce. Mix well. Pour into skillet.
  7. Cook over medium heat, stirring constantly until thickens and smooth. (about 3-5 minutes)
  8. Add the meatballs and pineapple tidbits.
  9. Serve over rice as a meal or on toothpicks as an appetizer.
* When I make this as a meal, I like to double the sauce and pineapple ingredients.
